Looking for an elegant dessert for Valentines Day? 



Nigella's Instant Chocolate Mousse  

Ingredients

  • 3 cups mini marshmallows
  • 1/2 stick unsalted butter, softened
  • 9 ounces best quality semisweet chocolate, chopped into small pieces
  • 1/4 cup hot water from a recently boiled kettle
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Directions

Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.
Put the saucepan on the stove, over heat, though keep it fairly gentle, to melt, stirring every now and again. Remove from the heat.
Meanwhile whip the cream with the vanilla until thick and then fold into the cooling chocolate mixture until you have a smooth, cohesive mixture.
Pour or scrape into 4 or 6 glasses or small dishes and chill until you want to eat.
I serve with a chocolate covered strawberry, placed on the top♥

Garlic Cauliflower Mashed Potatoes

1 large head of cauliflower or 2 (16oz.) bags frozen florets
5 large cloves of garlic
salt
2 T. butter
1/4 t. nutmeg
pepper to taste
Fill up a large stockpot with an inch or two of water. Place a steamer insert in the pot, cover with lid and set burner on high.
While waiting for water to boil if using fresh cauliflower, wash and trim. Slice up the garlic cloves. Once the water is boiling, throw in half of the florets and garlic, salt liberally, then add remaining florets and salt again. replace the lid and steam until soft about 10 minutes. Drain in colander and dump in food processor. Season with pepper, nutmeg and add butter. Process until smooth.
